Cupcakes for dinner? Remember, everything is not always as it seems. Trick your family by telling them they get to eat desert first tonight. These cupcakes are actually cheese filled meatloafs, topped with creamy mashed potatoes and a cherry on top, a cherry tomato that is!
Ingredients
1/2 pound of ground beef
1 egg
½ cup of cracker crumbs or breadcrumbs
2 teaspoons of worcestshire sauce
1 teaspoon salt
½ teaspoon pepper
¼ cup ketchup
2 mozzarella cheese sticks cut into 8 pieces
16 Foil cupcake liners
1 ½ cups prepared instant mashed potatoes or leftover mashed potatoes
8 cherry tomatoes
Directions
Combine first seven ingredients in a bowl. Divide ½ of mixture among 8 cupcake liners placed in a cupcake pan. Place one section of mozzarella stick in center of each (this will look like the cream filling). Divide the remaining meat mixture among cupcakes, placing meat over cheese. Bake in oven for 25 minutes in a 400 degree oven or until cooked through. Let “cupcakes” cool. When cool, remove meatloaf from liner and place into clean fresh liner.
Warm potatoes if using leftovers, or follow directions on instant potato mix. Place potatoes into a piping bag, using the largest swirl tip you have. Pipe on mashed potatoes to resemble frosting. Place cherry tomato on top. Time to trick your guests! He-he-he-he!! Dinner for Desert!
