We were invited to a party not so long ago, all I was asked to bring was a green bean casserole. I soon realized I was out of out of all the ingredients I needed! I thought quickly, and came up with an even better version, using Philadelphia Cream Cheese. I topped bright green beans and mushrooms off with rich and creamy cream cheese custard that is covered with caramelized onions, parmesan cheese and parsley. Yum! I know this will be your new favorite green bean casserole recipe.
• Servings: 12
• 1 pound(s) of frozen green beans
• 1 extra large sweet onion (2 medium size will do!)
• 1 stick of butter
• 16 ounce(s) of sliced fresh mushrooms
• 16 ounce(s) of Original Philadelphia Cream Cheese
• 12 ounce(s) of evaporated milk
• 2 eggs
• 8 ounce(s) of shredded parmesan cheese
• 1 package of pre-cooked bacon (just an option for something different!)
• 1 tsp. of salt and a pinch for the onions
• 1 tsp. of fresh ground pepper
• 1/4 cup(s) of fresh chopped parsley
Steps
1. Cook frozen beans in a microwave safe bowl, for 8-10 minutes, or until cooked, yet firm.
2. Slice sweet onion, dicing 1/4 of onion, reserving to use with mushrooms.
3. In fry pan, add sliced onion with 1/2 stick of butter. Add a pinch of salt. Cook over medium low heat until sweet and caramelized. Be patient- this takes at least 30 minutes!
4. In another pan, combine mushrooms, diced onions, pinch of salt and remaining 1/2 stick of butter. Cook until softened and slightly brown, about 8-10 minutes.
5. To create cream cheese custard, combine cream cheese, evaporated milk and eggs. Combine with a hand mixer, until light and creamy.
6. By now, your beans should be cooked and ready to go. To assemble, place beans and mushrooms in large greased baking dish. If desired add crumbled bacon to the mixture. Season with salt and pepper.
7. Pour cream cheese custard on top. Sprinkle with parmesan cheese.
8. Place casserole into 400 degree oven, or until browned and bubbling and custard is set.
9. Remove from oven, top with caramelized onions and fresh parsley.
10. Serve at your next party, or family gathering!
